A whole roast chicken cooked in the slow cooker — juicy, tender, and falling off the bone. Minimal effort, maximum flavour.

Ingredients

  • 1 whole chicken (about 1.5kg)
  • 1 onion, quartered
  • 4 cloves garlic, whole
  • 2 carrots, chunked
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tbsp olive oil
  • Salt and pepper

Method

  1. Mix the paprika, garlic powder, thyme, oregano, oil, salt, and pepper into a paste. Rub all over the chicken.
  2. Place the onion, garlic, and carrots in the bottom of the slow cooker.
  3. Sit the chicken on top of the vegetables.
  4. Cook on Low for 8 hours or High for 5-6 hours.
  5. The chicken is done when the juices run clear and the legs pull away easily.
  6. If you want crispy skin, pop under a hot grill for 5 minutes before serving.

Tips

The slow cooker won’t crisp the skin, but the meat will be incredibly juicy. A quick blast under the grill sorts the skin out.
