Ingredients
- 3 large sweet potatoes, peeled and cubed
- 1 onion, diced
- 2 cloves garlic, crushed
- 400ml tin coconut milk
- 200g tin chopped tomatoes
- 2 tbsp curry paste (any variety)
- 1 tsp turmeric
- 1 tsp ground cumin
- 100g fresh spinach
- Salt to taste
Method
- Place sweet potatoes, onion, and garlic in the slow cooker.
- Add coconut milk, tomatoes, curry paste, turmeric, and cumin.
- Cook on Low for 6-8 hours until sweet potatoes are tender.
- Stir in the spinach until wilted.
- Serve over rice.
Tips
The sweet potato breaks down slightly, making the curry thick and creamy without any dairy.
