A gorgeous golden vegan curry. Sweet potato, coconut, and warming spices — pure comfort.

Ingredients

  • 3 large sweet potatoes, peeled and cubed
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 400ml tin coconut milk
  • 200g tin chopped tomatoes
  • 2 tbsp curry paste (any variety)
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 100g fresh spinach
  • Salt to taste

Method

  1. Place sweet potatoes, onion, and garlic in the slow cooker.
  2. Add coconut milk, tomatoes, curry paste, turmeric, and cumin.
  3. Cook on Low for 6-8 hours until sweet potatoes are tender.
  4. Stir in the spinach until wilted.
  5. Serve over rice.

Tips

The sweet potato breaks down slightly, making the curry thick and creamy without any dairy.
