Ingredients

  • 175g self-raising flour
  • 100g soft dark brown sugar
  • 100g dates, chopped
  • 50g melted butter
  • 1 egg
  • 150ml boiling water
  • 1 tsp bicarbonate of soda
  • 1 tsp vanilla extract
  • For the sauce:
  • 100g butter
  • 150g dark brown sugar
  • 200ml double cream

Method

  1. Soak the dates in the boiling water with the bicarbonate of soda for 10 minutes.
  2. Mix the flour, sugar, melted butter, egg, and vanilla.
  3. Stir in the date mixture.
  4. Pour into a greased slow cooker or a pudding basin that fits inside your slow cooker.
  5. Cook on High for 2-3 hours until a skewer comes out clean.
  6. Make the sauce: melt butter and sugar in a pan, stir in the cream, and simmer for 3 minutes.
  7. Turn out the pudding and drench with toffee sauce. Serve with cream or ice cream.

Tips

Use Medjool dates if you can afford them — they’re softer and sweeter. Regular supermarket chopped dates work perfectly too.
