Veggie Sausage Casserole

A vegetarian version of the classic sausage casserole. Just as warming and flavourful.

Ingredients

  • 8 vegetarian sausages
  • 400g tin chopped tomatoes
  • 400g tin baked beans
  • 1 onion, sliced
  • 2 cloves garlic, crushed
  • 200ml vegetable stock
  • 2 tsp smoked paprika
  • 1 tsp mixed herbs
  • Salt and pepper

Method

  1. Brown the veggie sausages.
  2. Add to slow cooker with everything else.
  3. Cook LOW 6-7 hours.
  4. Season and serve with mash.

Tips

Most supermarket veggie sausages work great in the slow cooker. Richmond and Linda McCartney are popular choices.
