Ingredients
- 3 sweet potatoes, peeled and cubed
- 1 onion, diced
- 2 cloves garlic, crushed
- 400ml coconut milk
- 400ml vegetable stock
- 1 tsp cumin
- 1 tsp turmeric
- ½ tsp chilli flakes
- Salt and pepper
Method
- Add the sweet potatoes, onion, and garlic to the slow cooker.
- Pour in the coconut milk and stock.
- Add the spices and seasoning.
- Cook on LOW for 6-7 hours.
- Blend until smooth with a stick blender.
- Serve with a swirl of coconut milk and warm bread.
Tips
Top with toasted pumpkin seeds and a drizzle of chilli oil for restaurant-style presentation.
