Sweet Potato and Coconut Soup

Ingredients

  • 3 sweet potatoes, peeled and cubed
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 400ml coconut milk
  • 400ml vegetable stock
  • 1 tsp cumin
  • 1 tsp turmeric
  • ½ tsp chilli flakes
  • Salt and pepper

Method

  1. Add the sweet potatoes, onion, and garlic to the slow cooker.
  2. Pour in the coconut milk and stock.
  3. Add the spices and seasoning.
  4. Cook on LOW for 6-7 hours.
  5. Blend until smooth with a stick blender.
  6. Serve with a swirl of coconut milk and warm bread.

Tips

Top with toasted pumpkin seeds and a drizzle of chilli oil for restaurant-style presentation.
