Ingredients

  • 200g digestive biscuits, crushed
  • 75g butter, melted
  • 400g cream cheese
  • 100g caster sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 150ml sour cream
  • 2 tbsp plain flour

Method

  1. Mix biscuit crumbs and butter. Press into lined slow cooker insert or a cake tin that fits inside.
  2. Beat cream cheese, sugar, eggs, vanilla, sour cream, and flour until smooth.
  3. Pour onto the base.
  4. Cook LOW 2-3 hours until set with a slight wobble.
  5. Cool completely before refrigerating for at least 4 hours.
  6. Slice and serve.

Tips

Place a tea towel under the lid to stop condensation dripping onto the cheesecake.
