Red Lentil Dhal

Ingredients

  • 250g red lentils, rinsed
  • 1 onion, diced
  • 3 cloves garlic, crushed
  • 2cm ginger, grated
  • 400g tin chopped tomatoes
  • 400ml vegetable stock
  • 200ml coconut milk
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp garam masala
  • ½ tsp chilli powder
  • Salt
  • Fresh coriander and rice, to serve

Method

  1. Add the lentils, onion, garlic, and ginger to the slow cooker.
  2. Pour in the tomatoes, stock, and coconut milk.
  3. Add the turmeric, cumin, garam masala, and chilli powder. Stir.
  4. Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  5. The lentils will break down into a thick, creamy dhal. Stir well.
  6. Season with salt. Serve over rice with fresh coriander.

Tips

For a tarka finish, heat oil in a small pan and fry cumin seeds, mustard seeds, and dried chilli flakes. Pour over the dhal just before serving.
