Slow Cooker Pork Belly

Meltingly tender pork belly with crackling finished under the grill. An absolute showstopper.

Ingredients

  • 1kg pork belly
  • 2 onions, quartered
  • 4 cloves garlic, crushed
  • 200ml chicken stock
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp Chinese five spice
  • Salt and black pepper

Method

  1. Score the pork belly skin in a crosshatch pattern. Pat the skin completely dry with kitchen paper.
  2. Season the meat (not the skin) with five spice, salt, and pepper.
  3. Place the onions and garlic in the slow cooker.
  4. Sit the pork belly on top, skin-side up.
  5. Pour the stock, soy sauce, and honey around (not over) the pork — keep the skin dry.
  6. Cook on LOW for 8 hours.
  7. For crackling: remove the pork, pat the skin dry, rub with salt, and grill on high for 10-15 minutes until blistered and crispy.
  8. Slice and serve with the cooking juices as gravy.

Tips

The key to crackling is keeping the skin dry. Don’t let any liquid splash onto it during cooking.
