Ingredients
- 1kg pork belly
- 2 onions, quartered
- 4 cloves garlic, crushed
- 200ml chicken stock
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp Chinese five spice
- Salt and black pepper
Method
- Score the pork belly skin in a crosshatch pattern. Pat the skin completely dry with kitchen paper.
- Season the meat (not the skin) with five spice, salt, and pepper.
- Place the onions and garlic in the slow cooker.
- Sit the pork belly on top, skin-side up.
- Pour the stock, soy sauce, and honey around (not over) the pork — keep the skin dry.
- Cook on LOW for 8 hours.
- For crackling: remove the pork, pat the skin dry, rub with salt, and grill on high for 10-15 minutes until blistered and crispy.
- Slice and serve with the cooking juices as gravy.
Tips
The key to crackling is keeping the skin dry. Don’t let any liquid splash onto it during cooking.
