Ingredients
- 600g lamb shoulder, cubed
- 1 onion, diced
- 3 cloves garlic, crushed
- 400g tin chickpeas, drained
- 400g tin chopped tomatoes
- 100g dried apricots
- 200ml chicken stock
- 2 tsp cumin
- 2 tsp coriander
- 1 tsp cinnamon
- 1 tsp turmeric
- 1 tsp paprika
- 1 tbsp honey
- Salt
- Couscous, to serve
Method
- Brown the lamb. Place in the slow cooker.
- Add the onion, garlic, chickpeas, and apricots.
- Mix the tomatoes, stock, all spices, and honey. Pour over.
- Cook on LOW for 8 hours until the lamb is meltingly tender.
- Season to taste. Serve over couscous with fresh coriander.
Tips
Scatter with toasted flaked almonds and pomegranate seeds for a stunning presentation.
