Ingredients
- 200g red lentils, rinsed
- 3 carrots, diced
- 1 onion, diced
- 2 cloves garlic, crushed
- 800ml vegetable stock
- 1 tsp cumin
- ½ tsp turmeric
- Salt and pepper
- Crusty bread, to serve
Method
- Add lentils, carrots, onion, and garlic to the slow cooker.
- Pour in the stock and add spices.
- Cook on LOW for 6-7 hours.
- Blend until smooth (or leave chunky).
- Season and serve with bread.
Tips
Costs less than a quid for the whole pot. Hard to beat.
