Lemon and Garlic Chicken

Ingredients

  • 6 chicken thighs (bone-in)
  • 6 cloves garlic, crushed
  • 2 lemons (juice of both, one sliced)
  • 200ml chicken stock
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and black pepper
  • New potatoes and salad, to serve

Method

  1. Place the lemon slices in the base of the slow cooker.
  2. Mix the lemon juice, garlic, olive oil, oregano, paprika, salt, and pepper.
  3. Rub the mixture all over the chicken thighs.
  4. Place the chicken on top of the lemon slices.
  5. Pour the stock around (not over) the chicken.
  6. Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  7. Serve with buttery new potatoes and a green salad.

Tips

The lemon slices underneath stop the chicken from sitting in liquid and keep the skin from going soggy.
