Ingredients
- 6 chicken thighs (bone-in)
- 6 cloves garlic, crushed
- 2 lemons (juice of both, one sliced)
- 200ml chicken stock
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and black pepper
- New potatoes and salad, to serve
Method
- Place the lemon slices in the base of the slow cooker.
- Mix the lemon juice, garlic, olive oil, oregano, paprika, salt, and pepper.
- Rub the mixture all over the chicken thighs.
- Place the chicken on top of the lemon slices.
- Pour the stock around (not over) the chicken.
- Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
- Serve with buttery new potatoes and a green salad.
Tips
The lemon slices underneath stop the chicken from sitting in liquid and keep the skin from going soggy.
