Ingredients

  • 600g lamb shoulder, cubed
  • 1 onion, diced
  • 3 cloves garlic, crushed
  • 100g dried apricots
  • 400g tin chopped tomatoes
  • 200ml chicken stock
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp cinnamon
  • Salt
  • Rice, to serve

Method

  1. Brown lamb and add to slow cooker.
  2. Add everything else.
  3. Cook LOW 8 hours.
  4. Season and serve with rice.

Tips

The apricots break down and sweeten the sauce naturally.
