Mediterranean Fish Stew

A light but flavourful fish stew with tomatoes, peppers, and herbs. Ready quicker than most slow cooker meals.

Ingredients

  • 400g firm white fish (cod or haddock), cubed
  • 200g raw prawns
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 1 pepper, diced
  • 400g tin chopped tomatoes
  • 200ml fish or chicken stock
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • Salt and pepper
  • Crusty bread, to serve

Method

  1. Add onion, garlic, pepper, tomatoes, stock, paprika, and oregano to the slow cooker.
  2. Cook on HIGH for 2 hours to make the base.
  3. Add the fish and prawns. Cook for 30-45 more minutes until fish is cooked through.
  4. Season and serve with crusty bread.

Tips

Don’t add the fish at the start or it’ll fall apart. The short cooking time keeps it perfect.
