Ingredients

  • 175g self-raising flour
  • 100g caster sugar
  • 3 tbsp cocoa powder (divided)
  • 100ml milk
  • 50g butter, melted
  • 1 egg
  • 1 tsp vanilla extract
  • For the sauce:
  • 150g light brown sugar
  • 2 tbsp cocoa powder
  • 300ml boiling water

Method

  1. Mix the flour, caster sugar, and 2 tbsp cocoa powder in a bowl.
  2. Stir in the milk, melted butter, egg, and vanilla until smooth.
  3. Pour into a greased slow cooker.
  4. For the sauce: mix the brown sugar and remaining cocoa powder. Sprinkle evenly over the batter.
  5. Gently pour the boiling water over the back of a spoon onto the mixture. Don't stir.
  6. Cook on HIGH for 2-3 hours until the sponge is set on top.
  7. Spoon out — the fudge sauce will be underneath. Serve with ice cream or custard.

Tips

Don’t panic when you pour water over cake batter — the magic happens during cooking. The sauce sinks to the bottom.
