Ingredients
- 175g self-raising flour
- 100g caster sugar
- 3 tbsp cocoa powder (divided)
- 100ml milk
- 50g butter, melted
- 1 egg
- 1 tsp vanilla extract
- For the sauce:
- 150g light brown sugar
- 2 tbsp cocoa powder
- 300ml boiling water
Method
- Mix the flour, caster sugar, and 2 tbsp cocoa powder in a bowl.
- Stir in the milk, melted butter, egg, and vanilla until smooth.
- Pour into a greased slow cooker.
- For the sauce: mix the brown sugar and remaining cocoa powder. Sprinkle evenly over the batter.
- Gently pour the boiling water over the back of a spoon onto the mixture. Don't stir.
- Cook on HIGH for 2-3 hours until the sponge is set on top.
- Spoon out — the fudge sauce will be underneath. Serve with ice cream or custard.
Tips
Don’t panic when you pour water over cake batter — the magic happens during cooking. The sauce sinks to the bottom.
