Ingredients
- 600g chicken thighs (boneless), cubed
- 300g spinach
- 1 onion, diced
- 3 cloves garlic, crushed
- 2cm ginger, grated
- 200ml chicken stock
- 2 tsp cumin
- 1 tsp garam masala
- 1 tsp turmeric
- ½ tsp chilli powder
- 100ml double cream
- Salt
- Rice, to serve
Method
- Add chicken, onion, garlic, and ginger to the slow cooker.
- Add the stock and spices.
- Cook on LOW for 5-6 hours.
- Stir in the spinach and cream in the last 30 minutes.
- Blend slightly if you want a smoother sauce (or leave chunky).
- Serve with rice.
Tips
Fresh spinach wilts down a lot — 300g looks like mountains but cooks to almost nothing.
