Chicken Saag

Tender chicken in a vibrant spinach sauce with warming spices. A curry house favourite.

Ingredients

  • 600g chicken thighs (boneless), cubed
  • 300g spinach
  • 1 onion, diced
  • 3 cloves garlic, crushed
  • 2cm ginger, grated
  • 200ml chicken stock
  • 2 tsp cumin
  • 1 tsp garam masala
  • 1 tsp turmeric
  • ½ tsp chilli powder
  • 100ml double cream
  • Salt
  • Rice, to serve

Method

  1. Add chicken, onion, garlic, and ginger to the slow cooker.
  2. Add the stock and spices.
  3. Cook on LOW for 5-6 hours.
  4. Stir in the spinach and cream in the last 30 minutes.
  5. Blend slightly if you want a smoother sauce (or leave chunky).
  6. Serve with rice.

Tips

Fresh spinach wilts down a lot — 300g looks like mountains but cooks to almost nothing.
