Chicken Enchilada Filling

Ingredients

  • 600g chicken thighs (boneless)
  • 400g tin chopped tomatoes
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 2 tbsp tomato puree
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 1 tsp chilli powder
  • 1 tsp oregano
  • Salt and pepper

Method

  1. Place chicken in the slow cooker.
  2. Mix everything else together and pour over.
  3. Cook on LOW for 6-7 hours.
  4. Shred the chicken and stir into the sauce.
  5. Use in enchiladas, burritos, tacos, or quesadillas.

Tips

Roll in tortillas with cheese, cover in enchilada sauce, and bake for 20 minutes for proper enchiladas.
