Ingredients
- 600g chicken thighs (boneless)
- 400g tin chopped tomatoes
- 1 onion, diced
- 2 cloves garlic, crushed
- 2 tbsp tomato puree
- 2 tsp cumin
- 2 tsp smoked paprika
- 1 tsp chilli powder
- 1 tsp oregano
- Salt and pepper
Method
- Place chicken in the slow cooker.
- Mix everything else together and pour over.
- Cook on LOW for 6-7 hours.
- Shred the chicken and stir into the sauce.
- Use in enchiladas, burritos, tacos, or quesadillas.
Tips
Roll in tortillas with cheese, cover in enchilada sauce, and bake for 20 minutes for proper enchiladas.
