Chicken and Bacon Casserole

Ingredients

  • 6 chicken thighs
  • 150g smoked bacon, chopped
  • 1 onion, sliced
  • 200g mushrooms, sliced
  • 300ml chicken stock
  • 100ml double cream
  • 1 tsp thyme
  • 1 tsp mustard
  • Salt and pepper

Method

  1. Fry bacon until crispy. Add to slow cooker.
  2. Add chicken, onion, and mushrooms.
  3. Mix stock, thyme, and mustard. Pour over.
  4. Cook LOW 6-7 hours.
  5. Stir in cream last 20 minutes. Season and serve.

Tips

Serve with jacket potatoes for a complete meal.
