Ingredients
- 1 large head broccoli, chopped
- 1 onion, diced
- 1 potato, cubed
- 700ml vegetable stock
- 100g Stilton, crumbled
- 100ml cream
- Salt and pepper
Method
- Add broccoli, onion, and potato to slow cooker.
- Pour over stock.
- Cook LOW 6 hours.
- Blend until smooth.
- Stir in Stilton and cream until melted.
- Season and serve with crusty bread.
Tips
Any blue cheese works — you could use Roquefort or Danish Blue instead of Stilton.
