Broccoli and Stilton Soup

Ingredients

  • 1 large head broccoli, chopped
  • 1 onion, diced
  • 1 potato, cubed
  • 700ml vegetable stock
  • 100g Stilton, crumbled
  • 100ml cream
  • Salt and pepper

Method

  1. Add broccoli, onion, and potato to slow cooker.
  2. Pour over stock.
  3. Cook LOW 6 hours.
  4. Blend until smooth.
  5. Stir in Stilton and cream until melted.
  6. Season and serve with crusty bread.

Tips

Any blue cheese works — you could use Roquefort or Danish Blue instead of Stilton.
