Ingredients

  • 2 x 400g tins black beans, drained
  • 1 onion, diced
  • 3 cloves garlic, crushed
  • 1 pepper, diced
  • 800ml vegetable stock
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • Juice of 1 lime
  • Salt and pepper

Method

  1. Add everything except lime to slow cooker.
  2. Cook LOW 6-7 hours.
  3. Blend half for texture. Squeeze in lime.
  4. Serve with sour cream and tortilla chips.

Tips

Top with avocado, fresh coriander, and a drizzle of hot sauce.
