A thick, hearty soup that’s practically a meal in itself. Cheap, filling, and properly warming.

Ingredients

  • 6 pork sausages, each cut into 3-4 pieces
  • 1 onion, diced
  • 2 carrots, diced
  • 150g red lentils, rinsed
  • 400g tin chopped tomatoes
  • 1 chicken stock cube dissolved in 800ml water
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper

Method

  1. If you have time, brown the sausage pieces in a pan for a few minutes.
  2. Place all ingredients in the slow cooker and stir.
  3. Cook on Low for 6-8 hours.
  4. The lentils will break down and thicken the soup naturally.
  5. Season to taste and serve with crusty bread.

Tips

This is one of the cheapest meals you can make — probably 50p a portion. The lentils make it incredibly filling.
