Ingredients
- 6 pork sausages, each cut into 3-4 pieces
- 1 onion, diced
- 2 carrots, diced
- 150g red lentils, rinsed
- 400g tin chopped tomatoes
- 1 chicken stock cube dissolved in 800ml water
- 1 tsp smoked paprika
- 1 tsp dried thyme
- Salt and pepper
Method
- If you have time, brown the sausage pieces in a pan for a few minutes.
- Place all ingredients in the slow cooker and stir.
- Cook on Low for 6-8 hours.
- The lentils will break down and thicken the soup naturally.
- Season to taste and serve with crusty bread.
Tips
This is one of the cheapest meals you can make — probably 50p a portion. The lentils make it incredibly filling.
