A fragrant, slightly sweet North African tagine-style stew. Aromatic spices, dried apricots, and tender lamb.

Ingredients

  • 500g diced lamb
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 400g tin chopped tomatoes
  • 400g tin chickpeas, drained
  • 100g dried apricots, halved
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 200ml lamb or chicken stock
  • Fresh coriander and flaked almonds to serve

Method

  1. Place the lamb, onion, and garlic in the slow cooker.
  2. Add the tomatoes, chickpeas, apricots, all spices, and stock. Stir well.
  3. Cook on Low for 7-8 hours until the lamb is very tender.
  4. Serve over couscous with fresh coriander and flaked almonds scattered on top.

Tips

Dried apricots add a lovely sweetness that balances the warm spices. You can find them cheaply in the baking aisle.
