Ingredients
- 500g diced lamb
- 1 onion, diced
- 2 cloves garlic, crushed
- 400g tin chopped tomatoes
- 400g tin chickpeas, drained
- 100g dried apricots, halved
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp ground coriander
- 1 tsp turmeric
- 200ml lamb or chicken stock
- Fresh coriander and flaked almonds to serve
Method
- Place the lamb, onion, and garlic in the slow cooker.
- Add the tomatoes, chickpeas, apricots, all spices, and stock. Stir well.
- Cook on Low for 7-8 hours until the lamb is very tender.
- Serve over couscous with fresh coriander and flaked almonds scattered on top.
Tips
Dried apricots add a lovely sweetness that balances the warm spices. You can find them cheaply in the baking aisle.
