Ingredients
- 250g red lentils, rinsed
- 1 onion, finely diced
- 3 cloves garlic, crushed
- 400g tin chopped tomatoes
- 200ml coconut milk
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp garam masala
- 1 tsp fresh ginger, grated
- 500ml vegetable stock
- Juice of 1 lemon
- Fresh coriander to serve
Method
- Place the lentils, onion, garlic, tomatoes, and stock in the slow cooker.
- Add the cumin, ground coriander, turmeric, and ginger. Stir.
- Cook on Low for 6-8 hours or High for 3-4 hours.
- Stir in the coconut milk, garam masala, and lemon juice.
- Serve with basmati rice or naan bread, topped with fresh coriander.
Tips
Red lentils break down completely into a creamy, thick dhal. At around 40p per portion, this is hard to beat on value.
