Slow Cooker Red Lentil Dhal

A warming, gently spiced Indian lentil dish. Creamy, comforting, and incredibly cheap to make.

Ingredients

  • 250g red lentils, rinsed
  • 1 onion, finely diced
  • 3 cloves garlic, crushed
  • 400g tin chopped tomatoes
  • 200ml coconut milk
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp fresh ginger, grated
  • 500ml vegetable stock
  • Juice of 1 lemon
  • Fresh coriander to serve

Method

  1. Place the lentils, onion, garlic, tomatoes, and stock in the slow cooker.
  2. Add the cumin, ground coriander, turmeric, and ginger. Stir.
  3. Cook on Low for 6-8 hours or High for 3-4 hours.
  4. Stir in the coconut milk, garam masala, and lemon juice.
  5. Serve with basmati rice or naan bread, topped with fresh coriander.

Tips

Red lentils break down completely into a creamy, thick dhal. At around 40p per portion, this is hard to beat on value.
