Bright, zesty, and aromatic. This lemon and herb chicken fills the house with an incredible smell.

Ingredients

  • 1 whole chicken (1.5kg)
  • 1 lemon, halved
  • 4 cloves garlic, whole
  • 1 onion, quartered
  • 2 carrots, chunked
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper

Method

  1. Mix the olive oil, rosemary, thyme, oregano, salt, and pepper.
  2. Rub all over the chicken.
  3. Stuff the lemon halves and garlic cloves inside the cavity.
  4. Place onion and carrots in the slow cooker, then sit the chicken on top.
  5. Cook on Low for 7-8 hours or High for 4-5 hours.
  6. Rest for 10 minutes before carving.

Tips

Squeeze the cooked lemon halves over the carved chicken for an extra burst of citrus flavour.
