Restaurant-quality lamb shanks at a fraction of the price. The meat literally falls off the bone.

Ingredients

  • 2 lamb shanks
  • 1 onion, diced
  • 3 cloves garlic, crushed
  • 2 carrots, chunked
  • 200ml red wine
  • 200ml lamb or beef stock
  • 400g tin chopped tomatoes
  • 2 tbsp tomato puree
  • 1 sprig rosemary
  • 2 bay leaves
  • Salt and pepper

Method

  1. Season the lamb shanks and brown in a hot pan on all sides if possible.
  2. Place the onion, garlic, and carrots in the slow cooker.
  3. Sit the lamb shanks on top.
  4. Pour in the wine, stock, and tinned tomatoes. Add the tomato puree, rosemary, and bay leaves.
  5. Cook on Low for 8-10 hours until the meat is falling off the bone.
  6. Remove the rosemary sprig and bay leaves.
  7. Serve with creamy mashed potato.

Tips

This is a show-stopper for a date night or special dinner. It looks impressive but takes almost no effort.
