A rich, aromatic Kashmiri-style curry with meltingly tender lamb. Beautifully spiced without being too hot.

Ingredients

  • 500g diced lamb shoulder
  • 2 onions, diced
  • 3 cloves garlic, crushed
  • 400g tin chopped tomatoes
  • 3 tbsp rogan josh paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 150ml water
  • 2 tbsp natural yoghurt (optional, to serve)
  • Fresh coriander to serve

Method

  1. Place the lamb, onions, and garlic in the slow cooker.
  2. Add the tinned tomatoes, rogan josh paste, cumin, ground coriander, and water. Stir well.
  3. Cook on Low for 8 hours until the lamb is very tender.
  4. Stir in the garam masala.
  5. Serve over basmati rice with a dollop of yoghurt and fresh coriander.

Tips

Rogan josh paste from Patak’s works brilliantly here. The long cooking allows the spices to meld beautifully.
