Ingredients
- 500g lamb neck or shoulder, diced
- 4 medium potatoes, peeled and thickly sliced
- 2 onions, sliced
- 2 carrots, sliced
- 500ml lamb or chicken stock
- 1 tsp dried thyme
- 1 bay leaf
- Chopped fresh parsley
- Salt and pepper
Method
- Layer potato slices in the bottom of the slow cooker.
- Add a layer of onions and carrots.
- Add the seasoned lamb.
- Repeat layers, finishing with potatoes on top.
- Pour over the stock, add thyme and bay leaf.
- Cook on Low for 8 hours.
- Remove bay leaf, scatter with parsley, and serve.
