A simple, traditional one-pot with lamb, potatoes, and onions. No fancy ingredients, just honest comfort food.

Ingredients

  • 500g lamb neck or shoulder, diced
  • 4 medium potatoes, peeled and thickly sliced
  • 2 onions, sliced
  • 2 carrots, sliced
  • 500ml lamb or chicken stock
  • 1 tsp dried thyme
  • 1 bay leaf
  • Chopped fresh parsley
  • Salt and pepper

Method

  1. Layer potato slices in the bottom of the slow cooker.
  2. Add a layer of onions and carrots.
  3. Add the seasoned lamb.
  4. Repeat layers, finishing with potatoes on top.
  5. Pour over the stock, add thyme and bay leaf.
  6. Cook on Low for 8 hours.
  7. Remove bay leaf, scatter with parsley, and serve.

Tips
