Sun-dried tomatoes, spinach, and garlic in a creamy Parmesan sauce with chicken. Italian comfort food.

Ingredients

  • 4 chicken breasts
  • 3 cloves garlic, crushed
  • 50g sun-dried tomatoes, chopped
  • 200g fresh spinach
  • 150ml double cream
  • 50g grated Parmesan
  • 200ml chicken stock
  • 1 tsp dried Italian herbs
  • Salt and pepper

Method

  1. Place chicken in the slow cooker.
  2. Mix stock, garlic, sun-dried tomatoes, and Italian herbs. Pour over.
  3. Cook on Low for 4-5 hours.
  4. Stir in the cream, Parmesan, and spinach in the last 20 minutes.
  5. Serve with pasta or crusty bread.

Tips

Sun-dried tomatoes in the jar (in oil) are easier to use than the dry ones. Drain off the oil before adding.
