A proper comfort-food casserole with tender chicken in a creamy mushroom sauce. Pure comfort in a bowl.

Ingredients

  • 6 chicken thighs (boneless, skinless)
  • 1 onion, sliced
  • 250g mushrooms, sliced
  • 2 cloves garlic, crushed
  • 150ml double cream
  • 1 chicken stock cube dissolved in 200ml water
  • 1 tbsp Dijon mustard
  • 1 tsp dried tarragon
  • 1 tbsp cornflour mixed with 2 tbsp cold water
  • Salt and pepper

Method

  1. Place the chicken thighs in the slow cooker.
  2. Add the onion, mushrooms, and garlic.
  3. Mix the stock, mustard, and tarragon. Pour over the chicken.
  4. Cook on Low for 6-8 hours.
  5. Stir in the cream and the cornflour mixture. Cook for a further 15-20 minutes until thickened.
  6. Serve with mashed potatoes or rice.

Tips

Tarragon and chicken is a classic French combination. If you can’t find tarragon, thyme works well too.
