A spicy, vibrant curry packed with peppers and tomatoes. One for those who like a bit of heat.

Ingredients

  • 6 boneless chicken thighs, diced
  • 1 large onion, sliced
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 3 cloves garlic, crushed
  • 400g tin chopped tomatoes
  • 2 tbsp jalfrezi paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1 green chilli, sliced (optional)
  • Fresh coriander to serve

Method

  1. Place the chicken, onion, peppers, and garlic in the slow cooker.
  2. Add the tinned tomatoes, jalfrezi paste, cumin, ground coriander, and garam masala. Stir well.
  3. Cook on Low for 5-6 hours or High for 3 hours.
  4. Stir in the garam masala and green chilli if using.
  5. Serve with basmati rice and a scattering of fresh coriander.

Tips

Jalfrezi should have a bit of bite. Adjust the chilli to your taste, but don’t be shy with the spice.
